On His Way

Earlier today, Brian boarded his flight from Phoenix, Arizona, to Los Angeles, California, just to board another plane to take him to Seoul, Korea!

He is officially on his way to South Korea for the 2012 baseball season! Once the team lands in Seoul, they will spend one night in the city before boarding yet another plane to take them to Japan for the last weeks of spring training. What a couple days of traveling!!

I can’t believe that just about one month ago, we were just finalizing our decision to make the trip to Korea for this season and he was signing his contract with the Hanwha Eagles. What a crazy whirlwind since then.

Even more so, I can’t believe that in less than one month, I will be boarding my flight to join him once he is back in Korea after the conclusion of their training in Japan! I’m excited to hear from him once he arrives in Seoul and to hear all about the flight and the city and what I can expect when I arrive! Ekkk!

Lunch

Lunch today was a complete random pairing of things from my fridge and pantry.

Roasted chicken with balsamic ketchup for dipping.

Pretzels with hummus.

And red grapes.

With another piece of Valentine’s Day chocolate for dessert.

Dark chocolate raspberry was today’s truffle of choice. Love.

Extreme Quiet

I thought the house was quiet and lonely once Brian left for Arizona but boy was I wrong. I came home from work today and could have heard a pin drop when I opened the front door. Good thing Telli only has one night at the vet center…I don’t know what I would do in such a quiet house for any longer!

Also, good thing that I’m having a sister night tonight so I don’t have to sit in this quiet house all alone!

Before heading to her place, I put together a quick dinner since she had a pasta party to attend with her basketball team.  The playoffs start tomorrow and the reigning champs have a title to defend. I hope that carb loading does them well! 🙂

Dinner

I used more of the roasted chicken that I bought and sliced yesterday to make a pretty simple chicken quesadilla.

I tossed some pieces of chicken with Buffalo Wild Wings jammin’ jalapeno sauce and sandwiched it was a Laughing Cow cheese wedge and shredded Mexican cheese in a whole wheat tortilla.

This sauce is no joke. Has a definite kick to it – whoa!

I love adding Laughing Cow cheese to my quesadillas to make them extra creamy and cheesy! Sooo looking forward to those new flavors coming out – maybe a dessert quesadilla with the cinnamon cream…ohh, how I digress.

Back to dinner…on the side I had some steamed green beans sprinkled with seasoned salt.

And a handful of red grapes that went unpictured. I needed something sweet post dinner and that was good enough to hold me over until its dessert time at Katie’s. 🙂

Time to head off to watch the Bachelor and try not to gauge my eyes out or rip my ears off from looking at and listening to Courtney...”winning”…Vomit.

Question:

Do you like time completely alone at home or do you get lonely? I usually don’t mind spending time by myself but without Telli here it seems especially quiet. Not a fan!


New on My Radar

Before jumping into telling you about some new things on my radar today, I’ll start with an update on Telli.  The vet who performed his surgery just called and said that he did great!  He is awake and on some pain medication for a few hours and I can call in the morning about bringing him home!  We also had them x-ray his front legs while he was under because he has huge knots on them that we were worried about.  Good report there as well – swollen growth plates that will thin out as he grows.  Yay! for good results for the little guy! 🙂

And now,about those new products…

I learned about a couple new products that are just getting released to stores this morning that I absolutely cannot wait to try. I’m seriously going to be a hawk in the grocery store until I find them. And I just may make daily trips until I do! 😉

Kashi Banana Chocolate Chip Chewy Bars

I love all of the Kashi granola bars, especially their crunchy pumpkin spice flax ones, and the flavor combination in this one makes me excited to get my hands on one. Banana and chocolate chip?! Ummm, yes please!

Newbie #2:

Laughing Cow Cream Cheese Wedges

I wasn’t able to find much information on these, not even on the Laughing Cow website, but Hungry Girl told me about them in an email this morning. They are 1/3 fewer fat cream cheese wedges that come in a variety of flavors:

  • Classic Cream
  • Strawberries & Cream
  • Cinnamon Cream
  • Garden Veggie

Each wedge has 45 calories. Perfect travel sized, portion control cream cheese. Love! I already use the Laughing Cow wedges as cream cheese anyhow but I’m just excited about the additional flavors, especially cinnamon cream and garden veggie!!!

Do Laughing Cow and Kashi ship to Korea?! Anyone up for sending care packages?! 😉

Lunch

Yesterday while grocery shopping, I picked up a roasted chicken. This is one of my favorite tricks for easy meal prep for the week. I just cut the chicken up and store it in the fridge for easy meals – sandwiches, chicken salad, garden salad with chicken – or for quick chicken to use as an ingredient in a larger meal.

This morning, I took some of the chicken pieces and layered them on a whole wheat potato roll with a slice of cheddar cheese and baby spinach and then added some guacamole to finish the sandwich off prior to devouring into it.

On the side I had some more of the Greek potato salad that I made yesterday.

And I finished the meal off with a piece of chocolate from the second box of chocolate that I got from Brian for our early Valentine’s Day celebration.

Harry London’s signature dark chocolate disc. Of course I chose the biggest piece in the box! Delish.
