Teach Me How To Fuzzy

Day two in OKC and we have a new addiction.

Fuzzy’s Taco Shop.

It’s literally across the street from the stadium here and is situated with other restaurants right on the canal.

I spy a Marble Slab Creamery peeking out from behind the trees!

The menu is full of your typical Mexican options: tacos, burritos, quesadillas, salads, etc. You chose your protein, your shell and then “fuzz” up your entrée with toppings.

I went with a grilled shrimp taco which was topped with tomato, lettuce, cilantro and feta cheese. I was thrown off by mixing in the Greek with my Mexican in the cheese but it added a nice flavor twist.

While Brian opted for a burrito bowl (surprise!), which was served to him in a gigantic mixing bowl!

We ordered a side of queso and salsa to try and as a word of advice, be careful on ordering your chips and dips. We could have fed a small family with the amount we were given!  Well, until I got my hands on them that is…

Once you place your order at the front counter, you can pick up your “appetizers” immediately from the kitchen window.

And then wait for your order number to be called for pick up as well.

There is a large inside seating area, decorated with cool posters, painted fish and surfer themed.

With additional outdoor seating as well.

And in addition to the multitude of food options, they also have an abundant margarita, beer, tequila and specialty drink list.

That’s only one portion of the hefty beverage menu. If Brian wasn’t pitching tonight I would have definitely ordered an afternoon cocktail but instead we stuck to the fountain soda machine.

Reusable cups that are only $1.00 for refills when you bring them back on future visits – we will be taking advantage of that! 🙂

And look what else my little eyes spied on the walk back to the hotel…

Self-serve frozen yogurt with in a stone’s throw from where we are staying – wooohooo! 🙂

Girl Time

Workout

After a day of travel and a day of being crushed with jet lag yesterday, I finally made it to the gym this morning for a workout.

I kept the complete workout to running only and covered a little over 5 miles on the treadmill. The difference in humidity between here and Korea is crazy and the difference in my running because of it was crazier. I felt so heavy and couldn’t breathe for the majority of the run. For as in shape as I felt on my runs over there, I felt even more so out of shape today. Wow!

After the gym, we had a very important stop to make.

My first Dunkin Donuts coffee since being back. I forgot just how good American DD tastes and downed this large iced coffee in no time. Perfect post workout treat!

The rest of the morning was filled with girl time. Manis and pedis for my best friend, Jeremy, and me courtesy of Brian.

It was so nice to just relax and chat away with a girlfriend for a bit and it continued over lunch as well.

Lunch

We grabbed lunch after our appointments at Qdoba.

A naked ground beef burrito. I don’t order ground beef in my burritos/Mexican meals often but whenever I do, I remember just how much I love it!

Now it’s time to head out for his and hers haircuts before taking Telli for a walk and running errands. We have a busy evening ahead of us!!!

Our Last Day

We were originally told that we had to stay in South Korea for seven days after Brian was released in case he were to be claimed by another KBO team. However, after some discussion with his agent and the front office with the Eagles, we were informed that we could leave after 48 hours. Originally, we were going to stay so that I could run my race in Seoul next weekend, however, the more we thought about it, the more we just wanted to get HOME!

We ended up being lucky enough to get on a flight home tomorrow so today was our last day in Daejeon and we spent it finishing up the last of our packing, watching CSI and playing Rummy 500 – the usual! 🙂

Lunch

We made one last trip to The Mill for lunch to end our time here on a good note.

Not only are their sandwiches, french toast and waffles amazing so is their chicken salad!

I also ordered a kiwi juice which was basically a kiwi smoothie made with fresh kiwi and ice – so good!!

After lunch we walked through Old Downtown for a final time, stopped to pick up some baked goods to bring home and headed home to finish cleaning out the apartment.

Dinner

Our last meal in our apartment was the same as our first meal here together.

Pizza 2001!

We finally tried the sweet potato crust on our pizza which was stuffed int he crust along with extra cheese.

It made for a different, sweet taste to the pizza but was almost too filling at the end of each slice.

After dinner we both enjoyed desserts that we had been eying up for a while now from Sung Sim Dang, a local bakery, and never took the plunge on.

A chocolate mousse bear for me.

And a strawberry mousse dessert for Brian.

And with that…our time here in Daejeon, South Korea comes to a close. We have an early, early morning tomorrow so that means an early night tonight.

Home tomorrow!!!!!!!! 🙂


I Kept it Clean for Seven!

Day 7 of 7 complete! A successful week of the Keeping it Clean Challenge is in the books! It honestly feels like I just started the challenge but my body definitely feels the difference the past 7 days has made. It’s unfortunate that I had to do such a “cleanse” to clean up my eating habits after a few bad weeks but I feel confident that I’m back on track now.

Back on track and back with the best motto out there for healthy living (in my opinion):

“Everything in Moderation!”

Like yesterday, I definitely took advantage of the 20% leeway I gave myself when starting the challenge and made sure to celebrate Cinco de Mayo correctly! 😉

My final day of eats…

Breakfast:

Overnight Oats in a Jar with Honey, Yogurt, Raisins & Frozen Bananas

Morning Snack:

Yogurt with Raw Oats, Raisins & Agave Nectar

*Apparently my camera liked this snack too because it decided to eat the picture – oh well!*

Lunch:

Avocado Chicken Salad Burrito Bowl with Rice, Black Beans & Corn

Afternoon Snack:

Mixed Nuts with Raisins

Dinner:

Chicken Fajitas

2 for 1 Margaritas

Dessert:

Handful of Dark Chocolate Covered Acai Berries
