On His Way

Earlier today, Brian boarded his flight from Phoenix, Arizona, to Los Angeles, California, just to board another plane to take him to Seoul, Korea!

He is officially on his way to South Korea for the 2012 baseball season! Once the team lands in Seoul, they will spend one night in the city before boarding yet another plane to take them to Japan for the last weeks of spring training. What a couple days of traveling!!

I can’t believe that just about one month ago, we were just finalizing our decision to make the trip to Korea for this season and he was signing his contract with the Hanwha Eagles. What a crazy whirlwind since then.

Even more so, I can’t believe that in less than one month, I will be boarding my flight to join him once he is back in Korea after the conclusion of their training in Japan! I’m excited to hear from him once he arrives in Seoul and to hear all about the flight and the city and what I can expect when I arrive! Ekkk!

Lunch

Lunch today was a complete random pairing of things from my fridge and pantry.

Roasted chicken with balsamic ketchup for dipping.

Pretzels with hummus.

And red grapes.

With another piece of Valentine’s Day chocolate for dessert.

Dark chocolate raspberry was today’s truffle of choice. Love.

A Little Bit of This, A Little Bit of That

It’s no secret around here that I am a huge fan of sampler plates for my midday meal.

I mean just check out some of my past lunches…

I love having a mix of sweet and salty to satisfy any cravings that I might be having and the inclusion of protein, fruits, veggies, dairy, grains and good fats all in one meal but in controlled portion sizes is unbeatable.

So when packing today’s lunch, I got excited about the idea of reintroducing the sampler plate into my routine.

Lunch

Although today’s sampler plate didn’t end up covering all of my desired food groups, I still was able to work in a fair amount with the others stored away in my fridge for an afternoon snack! Perfect!

However, roasted chicken, pine nut hummus, 5 grain fiber select Wheat Thins and a banana did make it to today’s plate.

And you know what is even better?

When you can combine the ingredients to make cute little chicken hummus cracker-wiches!

Now to get that peanut butter, apple and carrots fit in throughout the rest of the day as my snacks…yeaaa, I don’t think that will be a problem! 🙂

Mellow Mushroom

As soon as Brian and I made it back from our run today, the skies opened and the rain started. We literally stepped foot in the driveway and BAM, hello rain!

We were hoping it wouldn’t last too long but the rest of the afternoon was pretty much under water so we spent some much-needed down time on the couch, where I finally got to watch the movie Taken.

I had heard so many rave reviews about it and had wanted to see it from when it first was released but never made it to the theater to do so. And apparently I never had time over the past three years either. I guess I’m a busier person than I thought! 😉

I am glad that I finally got to watch it though, such a great movie based on a such a scary thing! It’s sad that kidnapping and selling of women really takes place in our world today.

Dinner

For dinner tonight we decided on a pizza night while watching some Thursday night football.  I’ve heard so many things about Mellow Mushroom and was finally able to try it out tonight!

Half Hawaiian and half white pizza for B and me.

And meat lovers for his parents.

A little hummus on the side and two slices of pizza…I was set!!

All with a Sweetwater Blue beer. Love!!

And who can forget dessert?

Brian and I shared a small slice of chocolate and red velvet cakes and now I am stuffed to the brim! On to football time! 🙂

Oh, and yea…check out how our little puppy that we left behind with my parents is being spoiled rotten.

He’s not going to want to come home!!


Cookies for Cookies

Yesterday I came across news on The Great Food Blogger Cookie Swap while catching up on Courtney’s blog. I immediately was interested and obviously signed up for it myself.

The whole idea is similar to that of the Great Sweet Swap I just participated in except this one focuses on cookies (duh) and instead of swapping with one person, you swap with THREE! That means I send a dozen cookies to three different people and in return I get three dozen cookies, one each from three different people.

I love baking cookies and I love eating them even more so hello, this is right up my alley! If you love cookies too, you can still sign up until November 18th to be included in the swap. Right now there are 416 people participating so what are you waiting for?!

Lunch

Today’s lunch was a mishmosh of random (but yummy) food.

Leftover spaghetti squash from last night’s veggie packed dinner.

A rice cake with pine nut hummus and a Laughing Cow babybel cheese.

And an apple with peanut butter.

A little random altogether but hey, it covered some of my fruits, veggies, protein, healthy fat, dairy and grains intake on the day! 🙂

Question:
