Skype Session

This morning definitely was not the most productive of mornings. I knew that Skyping with my sister would end up being a pretty long conversation but by the time we actually disconnected the video chat, we had been chatting for two hours.

I guess that is what happens when you are halfway around the world from a sister that is one of your best friends and that you are used to talking to on a daily basis.

There is a lot going on right now for her and my brother-in-law so complete catch up sessions are definitely necessary! I can’t wait to go home for a few weeks this summer to get to be a part of this exciting time for them too! 😉

Workout – Part II

After Katie and I were finished playing Chatty Cathy’s, I buckled down and got part II of today’s workout completed.

Body Revolution, Phase 3, Workout 10 (which I accidentally did instead of 9 so I will swap their days for this week). I can’t believe that this is the second week of workouts 9 & 10 already and that it is almost time to move on to the last two weeks of the program!

Lunch

We bought a bunch of fresh fruit yesterday and when I opened the fridge post workout to find something for lunch, I started craving all of it. My initial thought was to have a salad with chicken and fruit but that meant cooking the chicken breast, which was going to take too long for my level of hunger.

So instead, I went with a quicker options – egg, ham and cheese on a toasted blueberry bagel.

With some strawberries and grapes on the side. Fruit craving = solved.

I also ended up cutting up some melon and I’m excited to have fruit salad for dessert tonight!

As for the rest of the afternoon, I have a mission in mind…

Find English board games! I got a hint as to where we should be able to find some on the page of a Daejeon Group on Facebook. Let’s hope the leads are correct!

Random Reviews

I have two random reviews for you today of different snack products that I have recently tried and loved.

The first was given to me by a friend this past weekend. She came across them while shopping and thought they looked like something that I would like so she picked a bag up for me.

Cracklesnax Veggie Squares

As you may be able to tell from the flat bag above, I absolutely LOVED these!  So much so that I killed them off in two sittings.  Whoops!  They are so light and airy yet crunchy and perfectly salted, I just couldn’t get enough!

They are by no means substitutes for the real deal veggies in fresh form but they are a great alternative to potato chip snacking for sure!

The second product, I happened to pick up in my travels this weekend because: 1. I love Stacy’s brand pita chips and 2. I had never tried this flavor before.

I snacked on these for the first time yesterday afternoon with some plain hummus. I absolutely love the flavoring of these pita chips and think they taste like the seasoning flavor from pizza flavored Pringles (random, I know), but obviously the MUCH healthier choice.

Regardless of the taste they resemble, they were great on their own and also with the hummus! Possibly one of my favorite flavors of Stacy’s!

Two wins for the random snack products!

Lunch

Today’s lunch was a plate of leftovers.

Two pizza muffins (so excited for them since I finished the ones I had for dinner last night!)…

And leftover spaghetti squash with marinara sauce, ricotta cheese, wilted spinach, green pepper and black olives.

And a stack of strawberries for a touch of fruit.

So happy I still have 7 more pizza muffins for the rest of the week!! 😉

A Little Bit of This, A Little Bit of That

It’s no secret around here that I am a huge fan of sampler plates for my midday meal.

I mean just check out some of my past lunches…

I love having a mix of sweet and salty to satisfy any cravings that I might be having and the inclusion of protein, fruits, veggies, dairy, grains and good fats all in one meal but in controlled portion sizes is unbeatable.

So when packing today’s lunch, I got excited about the idea of reintroducing the sampler plate into my routine.

Lunch

Although today’s sampler plate didn’t end up covering all of my desired food groups, I still was able to work in a fair amount with the others stored away in my fridge for an afternoon snack! Perfect!

However, roasted chicken, pine nut hummus, 5 grain fiber select Wheat Thins and a banana did make it to today’s plate.

And you know what is even better?

When you can combine the ingredients to make cute little chicken hummus cracker-wiches!

Now to get that peanut butter, apple and carrots fit in throughout the rest of the day as my snacks…yeaaa, I don’t think that will be a problem! 🙂

Hello Half Day!

It’s Friday!!! Does anyone else feel like this week flew by?! No complaints here though, I’ll take a quick week at the office to get to the weekend faster.

Even better, I won’t be at the office for the full day today, so my weekend will be starting even sooner!

Workout

I started this Friday morning off with a 60 minute yoga class that felt amazing on my muscles. I left the class feeling relaxed, stretched and ready to face the day.

After class, I spent 20 minutes on the arc trainer on an incline while raising the resistance every minute for the first 10 minutes until it reached 50 and then taking the same pattern back down for the last 10 minutes.

Breakfast

This morning’s breakfast brought the return of the bagel-wich.

One fried egg topped with two slices of turkey and a slice of pepperjack cheese.

All sandwiched between a sliced bagel.

Strawberries and blueberries on the side.

Off to get some work done before a meeting and then it’s the weekend, baby!!! I’ll be at the house all afternoon/evening getting work done so you may not hear from me again until tonight but hopefully I’ll be full of house updates for you!
